On the weekend I made an excellent quiche without eggs or cheese!!!!
1 lb firm tofu
1/4 cup nutritional yeast
green vegetables (I used 1 head of broccolli, you can use spinach, kale, etc)
Mushrooms
1/2cup soy milk
herbs and spices (salt, pepper, terragon, basil, paprika... thats what I used!)
any vegan pie crust/shell
I cheated and used a pre-made graham crust, but there are recipes to make you own vegan pie pastry dough
-fry up your greens, and mushrooms in a skillet with some oil
-in a food processor blend the tofu, milk, yeast, herbs and spices
-lay the veggies and mushrroms in the pie crust
-smooth the tofu/milk mixture on top and smooth it out
-put in the oven for 30 min or until the inside is cooked (insert a knife and make sure it comes out dry)
-enjoy
This is a nice high protien breakfast. The tofu mixture tastes very smooth and creamy if blended enough
