This is one of my favorites. I Use hummus as a spread in sandwiches and use it to dip veggies and bread. It's great on a bagel as a healthy vegan substitute to creamcheese.
-Soak chickpeas overnight
-boil them up and drain. Make sure to reserve a good 500ml of the starchy water
-in a blender pour about 150-200ml of starchy water, crushed garlic (3-4 cloves), 3-4 tbsp lemon juice, 250grams tahini, 125ml olive oil
-blend until well pureed
-add enough chickpeas to the mix so your blender is half full. blend on high
- keep alternating more chickpeas and more water to keep a desired consistancy
-refridgerate and enjoy!
