I have loads of recipes that I want to share (some healthy others not so much) But I thought I would post this one first because it is really easy, quick and yummy! I've nicked it from one of my classes
Potato Salad with Tofu Dressing450g poatoes, boiled and cubed (while warm but not hot)
1 spring onion, chopped
chopped parsley
Tofu Dressing125g silken tofu
15ml lemon juice
30ml olive oil
1/4 teaspoon salt
2.5ml soy sauce
1/4 garlic clove, crushed
1/4 teaspoon curry powder
1. place all ingredients for the dressing in a blender, puree until smooth
2. while potatoes are still warm, combine with spring onion and dressing (you might not need all of the dressing)
3. Sprinkle with parsley
4. Enjoy!
I was not sure the first time I made it that I would enjoy it as I hadn't used silken tofu as a sauce base before but after one bite I was in love!
