My little brother and I love this, whenever I could I would make it.
Based on the last batch I made:
4 small - med tomatoes, (scoop the seeds out - used for soup) cut into small cubes
6-8 fresh basil (from the garden)
a pinch of asafoetida/hing (I don't eat any form of onion or garlic, but feel free to add 1 clove of finely diced garlic)
salt and pepper to taste
a drizzle of extra virgin olive oil
optional: black olives / capers
This is a no cook stuff, so toss them together, self-served on toasted bread (should be baguette but since we didn't have any, we diagonally cut wheat buns instead)
It should yield approx. 1 - 1.5cups.
