OK this was made for me the other day - apparently it was on some TV programme about herbs & stuff (although it was varied a bit)
All measurements are approx feel free to vary:
125g watercress
1 pear
3 medium potatoes,
small onion
soya sauce
black pepper to taste
1/2 a cup of unsweetened soya milk
Put everything except pepper & soya milk into a pot & just cover with water. Simmer for 20-30 minutes. Whiz up into a smooth liquid, then add soya milk & pepper to taste. You can garnish with parsley if you like.
I've never had a soup with pear before & it works pretty well. This could work as a starter or as a smaller meal. I suppose you could vary it by adding garlic or a variety of different herbs, a tomato paste or swap onion for a leek etc. Surprisingly nice. It was said on the program that this was a traditional English soup (I suspect without the soya sauce & soya milk
).
Watercress is an ace food by the way. Mega high in loads of vitamins & minerals & can aid the liver in the detoxification process (it's also an anti-cancer food). So there you go, give it a try & see what you think.
