With those numbers it got really easy to make the right steps towards veganism.
here are our 11 dinners for this winter;
1; tomatoe soup
2; pasta
3; pea soup
4; oven grilled potatoes in their skins with lots of vegetables.
5; quiche
6; hearty carrot pie
7; home made pizza
8; brown rice and vegetable stir fry
9; tortilla's
10; legume/bean dish with apples
11; vegetable curry
we eat these with salads and other vegetables.
I'll start with providing you with the easiest tomatoe soup I've ever made.
for 2 people you need;
at least 6 medium sized tomatoes
1 medium sized onion
a bell pepper
vegetable stock cube
herbs
salt and pepper to taste
you can also add carrots or spring onions.
dice all of these, tomatoes can be quartered.
Heat up your soup pot and glaze your onions followed by your other vegetables.
When these are well glazed you add your water to make the soup.
Let it all simmer for at least 10 minutes to bring the flavours out.
Take the soup of the heat and use a stand mixer to make a nice even creamy soup.
It is really nice with whole wheat bread on a cold night, and when you use a fair amount of carrots I think it reminds me of pumpkin soup. Really tasty
I must say I am not that good at estimating the amounts when I make something, we usually have some soup left over.
